The San Pedro Market is the main supply point in the city, where tourists and locals come daily. This place was part of the Inca Trail that connected to Plaza de Armas, during the Inca Empire. The food tour continues with a short walk until reach the cooking studio located very near from the market in the historic center of Cusco. The kitchen will be ready to start the Peruvian cooking classes. You will start the class making a Peruvian cocktail known as Pisco Sour. This traditional alcoholic drink is made with Pisco, a grape distillated liquor, with lemon juice. The professional chef will explain, step by step, how to prepare a 4-course menu with basic cooking techniques. We are going to start with a tasty traditional first course called Tiradito. If your booking is for lunch, you will learn to cook a Mashua pureé with a Peruvian-Chinese sauté mushrooms, with the same flavors of a lomo saltado. The mashua is a tuber, very similar to the potato, harvested in the high Andes mountains and with amazing healthy properties. If you selected the dinner time, you will prepare a creamy Potatoes and Moraya cake. The moraya, also known as Chuño, is naturally dehydrated potato made with ancestral techniques. In the third course you will cook an important ingredient very use in the mountains’ cuisine, the Quinoa. For lunch, you are going to prepare Tamales of Quinoa, and for dinner a lovely Quinotto with mushrooms, a risotto style dish. You will enjoy your dish after finishing it and share with the rest of the group this great experience. Also, you will taste a non-alcoholic drink known as Chicha Morada, a sweet drink made with purple corn.
