Description
Learn coffee in the lab of Herber Huamani, Peru's 2025 National Brewers Cup (pour-over) Champion and Peru's competitor at the 2026 World Brewers Cup, inside a dedicated Cusco coffee laboratory. This 2.5-hour workshop takes you through the full craft: bean origin, filter brewing, espresso extraction, milk texturing, and a hands-on roast.
Start with an introduction to Peru's coffee varieties and how origin shapes flavor. Move to the V60 station to learn grind calibration, ratios, and sensory evaluation — assessing aroma, taste notes, and acidity like a professional cupper.
Next, step up to the espresso machine. Weigh, tamp, and pull shots while learning extraction ratios, then texture microfoam and build a cappuccino you'll taste and evaluate together.
Close with the highlight: a group roasting session guided by the Roast Master. You'll learn the fundamentals of the roast curve and leave with 150g of the coffee you helped roast, plus a printed recipe card to recreate your brews at home.
