Description
As the sun slips behind the Andes, Cusco reveals a different side of itself. The crowds around the Plaza de Armas begin to fade, the evening air turns crisp, and centuries-old Inca walls glow beneath the warm light of colonial lanterns. From nearby kitchens and street stalls comes the aroma of charcoal smoke, toasted corn and spices as locals head out for their evening meal.
Over four hours and 15+ tastings, we'll weave through the historic centre, exploring bustling markets, hidden alleyways and neighbourhood eateries that showcase the city's remarkable culinary heritage.
The evening begins with dishes that tell the story of Peru's many cultural influences. Enjoy pan con lomito, savour comforting arroz chaufa, born from Chinese immigration but made unmistakably Peruvian, and discover highland trout ceviche, where fresh Andean fish takes the place of its coastal counterpart.
As night falls, charcoal grills roar into life. Smoky anticuchos - marinated beef heart skewers - have been feeding Cusqueños for generations, while tamales steam gently and crisp papas rellenas reveal richly seasoned fillings beneath their golden potato shells.
The flavours grow ever more Andean as the evening unfolds. Warming corn soups, stuffed peppers and traditional mountain recipes lead to one of the region's most iconic delicacies: cuy. Roasted guinea pig has been enjoyed here for centuries and remains so deeply woven into Cusco's history that it famously appears at the centre of the Last Supper painting inside the city's cathedral.
We'll round things off with something sweet. Freshly fried picarones, the layered biscuit known as King Kong, and refreshing glasses of chicha morada provide the perfect finish to an unforgettable evening.
