Description
The Patronato por la Cocina del Callao, a non-profit civil institution made up of gastronomic entrepreneurs, artisanal fishermen, and cultural promoters, together with us, the Peruvian Foundation for Social Tourism, welcomes you to Callao.
We work to generate social transformation through knowledge and appreciation of the cultural heritage of Callao, from its cuisine and artisanal fishing to its music and heritage. For this reason, together with the initiatives of the members of the Board, who aspire to make Callao a safe, authentic, and peaceful tourist and gastronomic destination, we invite you to discover the First Port from an anthropological and sociological perspective and, of course, mainly through its cuisine, which includes the experience of ceviche on the shore with artisanal fishermen, tuna musciame, bread with silverside, traditional knowledge workshops in the heritage area, and always accompanied by a playlist curated by Chaqueta Piaggio, with background music to enhance the experience.
Traveling through the territory where the endless journey of cultural fusion began is not something you do every day. Peruvian cuisine owes a lot to the port of Callao, where everyone arrived to come into contact with our pre-Hispanic wealth: Spanish, Arabs, Africans, Greeks, Italians, Chinese, and Japanese. The saga of exploration and discovery in the flavors of Callao proves that Peruvian food was cooked in Callao.
